Peanut Butter Heaven Granola Bars

Ooooooomg. I’m in love.


Remember how we’re always looking for healthy (ha) and delicious snacks to eat at any and all times of the day? Preferably those that are loaded up on peanut butter and/or chocolate? Well, here you have it: granola bar perfection.

They’re sweet and salty and crunchy, everything you could possibly want a granola bar to be. The best part – they’re refrigerated. It might be a little unusual to have a cold granola bar, but trust me, it’s AMAZING. They’re also a no bake recipe, which means they’ll be even better during those hot summer days when all you want is something cold in your life and the thought of even turning on an oven is a joke. Can you tell I’m ready for warm weather already?


This recipe is so fast. We’re talking 10 – 15  minutes of prep, tops. Unless of course, you’re a dumbo like me, and it takes you an extra 10 minutes to open the jar of coconut oil. I swear it re-superglues itself every time I close it. If you have coconut oil issues too, run the lid under hot water, hit it with the blunt side of a knife, and repeat until the jar opens. Magic.


Now that the gymnastics season has ended, I’ve been hitting the gym (the normal person kind, not the one with beams, vaults, and mats) much more often. After a hot and sweaty spin on the treadmill, these granola bars are the perfect post-workout snack, especially when they’re straight from the refrigerator.  It’s enough motivation to get me to the gym any day.

Peanut Butter Granola Bars

Adapted from The Wiegands

2 cups of oats

2 cups of nuts and dried fruit (I used 2/3 cup of each toasted coconut, roasted peanuts, and dried cranberries)

1 cup of peanut butter

1/2 cup of coconut oil

2 tablespoons of honey

Line a brownie pan with parchment paper; set aside.

In a large bowl, stir together the oats, nuts, and dried fruit. Set aside.

In a medium saucepan, melt together the peanut butter, coconut oil, and honey until the mixture is dissolved. Pour over the the oats, nuts, and fruit, stirring to combine. Dump this mixture into the prepared pan and smooth to create a flat top. Refrigerate for at least 2 hours, then enjoy! Keep refrigerated for best storage.

  1. Sounds delicious! Do you know how many grams of protein per serving? To increase protein, I recently read that quinoa could be used as an alternative to oats. I’m going to try this one for my 9 year old gymnast son who trains 14+ hours a week! He’s always hungry! Must keep up with the growing 🙂 Thanks for sharing!

    • It’s probably about 4 grams of protein per serving, maybe slightly more. That’s a great idea to try it with quinoa – you definitely need a lot of energy for gymnastics!

  2. Great recipe!! I think adding hemp hearts and chia seed (whole or ground) will up your nutrition factor. (I add them to everything I bake.) E. added 3T. whole chia seeds.

    • That’s a great idea! Unfortunately, the one time I tried to buy chia seeds I was told by a certain parent that we were not going to buy “actual birdseed”…
