There are no words to describe how much I love snow days. It’s the best surprise ever to wake up and find out you have a day off of school to sleep in, stay in your pajamas all day, and watch the snow turn the world white.
It means time for relaxing, watching tv, and catching up on homework. It also means time for delicious, hot breakfasts and afternoon baking 🙂
This oatmeal is best eaten while you’re wrapped in a warm blanket. Being cozy during cold winter days is one of my very favorite things, which is probably why I love this oatmeal so much. It’s hot, filling, and bursting with classic fall spices. It’s basically banana bread in oatmeal form – what’s not to love?
My mom mentioned to me the other day that she had seen a recipe for bruleed oatmeal (most of our emails/texts relate to recipes), and I knew that it had to happen. The banana oatmeal recipe underneath the caramel-y sugar crust is one of my favorite oatmeal recipes adapted from Oh She Glows. I take out the nuts and raisins, substitute zucchini for a mashed banana, and today I left the sugar on top out because the brulee added more than enough sweetness.
Even though my family does happen to own a brulee torch (and I highly recommend purchasing one because they’re awesome and surprisingly safe), I decided it was easier to broil it in the oven for the sake of time. This recipe is a keeper!
Banana Brulee Oatmeal
1/3 cup of rolled oats
1 cup of vanilla unsweetened almond milk
1 tablespoon of ground flaxseed
1 banana, mashed
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/2 teaspoon of cloves
1/2 teaspoon of vanilla extract
1 tablespoon of granulated sugar
Set the oven to broil on high. Set out a medium sized ramekin – you will brulee the oatmeal in this soon.
Pour the oats and almond milk into a medium saucepan. Stir constantly on medium-high heat until it comes to a boil. Add the flax, banana, cinnamon, nutmeg, cloves, and vanilla extract, stirring between each addition. When the mixture is fully thick and cooked, remove from heat. Pour immediately into the ramekin. Sprinkle the granulated sugar evenly over the top.
Broil for about 5 minutes, or until the sugar on top bubbles. When you pull it out, the sugar should form a crust. Let cool for a few minutes, then enjoy!
