Peanut Butter Mug Cake

We’ve all had those days.

The ones where you need something sweet, and your house decided to be all out of cookies, brownies, or anything sugary and satisfying.

It’s too late to get out of your pajamas and run the the store, and you just can’t summon up the energy to turn on the oven. Luckily, there’s a solution.


Mug cakes are the beautiful invention that have taken the internet by storm. I obviously had to do some experimenting myself, but I’ve come to find out they aren’t as 1-2-3 easy as they seem. Microwave cooking is a little different from the usual oven methods, so here are some helpful tips for getting a successful mug cake every time.

Tip #1 – Make two cakes out of one recipe. Feel free to eat both of them (I promise not to judge), but they’ll turn out MUCH better if the batter is split into two mugs. No splattering and more even cooking is always a good thing.


Tip #2 – Use a 1 egg: 2 cake ratio. Unfortunately, this is one tip I learned the hard way. Unless you happen to enjoy bits of cooked egg in the middle of your cakes, this is a very important rule to follow. For example, the recipe I’m posting here will make 2 cakes, therefore, I only used 1 egg.

Tip #3 – This one is more of a personal preference, but I find it much easier to stir everything in a bowl first, then pour it into a mug. The whisk will actually fit inside, and your batter will end up much smoother – aka a better mug cake. You’ll only have one bowl to wash and it makes life a little bit easier.

Fast, easy, fluffy, and full of peanut butter. The texture of this cake is impressively good for something that cooked one minute in the microwave. It’s a total win-win.

Peanut Butter Mug Cake

Adapted from Kirbie’s Cravings (which only has the BEST selection of mug cake recipes ever)

Makes 2 cakes

4 tablespoons of all-purpose flour

4 tablespoons of granulated sugar

1/4 tsp of baking powder

1 large egg

3 tablespoons of peanut butter

3 tablespoons of milk

3 tablespoons of vegetable oil

Peanut butter chips, optional

Mix all ingredients (except the peanut butter chips) together in a small bowl. Pour half of the batter into each of two mugs, filling each about halfway. Microwave on high for 1 minute, then continue for 30 second intervals until the top is firm. Sprinkle some peanut butter chips on top, let cool/melt for 2-3 minutes, then enjoy!
