Oreo Brownies

Warning: these brownies are extremely addicting. Like, extremely. Proceed with caution.


Or you know, proceed with reckless abandon and just go ahead, eat ’em all. This alternative is also a highly recommended option 😉

I have to admit, these brownies were probably better idea BEFORE I turned the on the oven the second day of August….lets just say that it’s a little warm in here right now. Can you say summer baking problems?


If you’re willing to suffer through the extra heat, move to the southern hemisphere, wait for fall, or dose yourself with ice cream while the oven does its thing, then this recipe is well worth it. It’s an ooey, gooey, chocolately, double stuffed dessert. Love it.


Just when you thought brownies couldn’t get any better, we threw in a bunch of Oreos. Living on the edge, right here. It is summer, after all. If you really wanna go nuts, make ice cream sandwiches out of these babies. Just let them cool, put a scoop of ice cream between two, then freeze until they’re solid (or eat immediately). I’m drooooling.

P.S…Remind you of another blog post a few months ago? They were such a hit, I had to try another fun twist. And of course, Oreos are always the right answer.

Oreo Stuffed Brownies

Adapted from my favorite brownie recipe from Baking at Home with the Culinary Institue of America

Makes 1 pan (16 brownies)

3/4 cup of unsalted butter

4 ounces of unsweetened baking chocolate

2 large eggs

1 1/3 cups of granulated sugar

2 teaspoons of vanilla extract

1/4 teaspoon of salt

1/4 cup of cake flour

16 Oreo cookies (or any other chocolate sandwich cookie equivalent)

Preheat the oven to 350 F. Cry inside a little, wipe your tears with the sweet promise of Oreo brownies. Continue forward bravely. Spray a brownie pan with nonstick spray; set aside.

In a double boiler over medium-low heat, melt the butter and chocolate, stirring constantly. Remove from heat and let cool.

In a bowl, whisk together the eggs, sugar, vanilla extract, and salt until light and thick. Pour in the cooled chocolate mixture and stir to combine. Add in the flour, mixing thoroughly.

In the prepared pan, add a layer of Oreo cookies (my pan fit 16, I say wedge in as many as you can!). Pour the batter over the top of the cookies. Bake for 25-35 minutes, until a toothpick inserted comes out clean. The oreos may rise up a little, but that’s just fine. Let cool, then enjoy!
