I apologize for disappearing off the face of the earth for the last 2 weeks. Really truly honestly.
But, I do have an excellent excuse. In the most tragic event ever, our oven is BROKEN!
A few weeks ago we were hit with a crazy thunderstorm, and our house was hit by lightning. The circuit board was fried and basically all of our electrical devices broke. Over the next few days, the house was besieged by at least 8 different repairmen coming to fix different appliances. There…may have been one instance where I accidentally called one man “mom”. Awkward.
I’m not really sure why the oven is broken, or how long it will stay broken, but until then, I bring you the wonders of oven free desserts!
After the sleepover last week where my friend and I desperately tried making cookies on the stove (in case you’re curious, it doesn’t actually work very well), I’m pretty much convinced that making cookies that just don’t need baking in the first place are the way to go.
Enter no-bake cookies. With brown butter and peanut butter 🙂 Crunchy and cold – PERFECT for hot summer days!

No Bake Peanut Butter Cookies
Adapted from How Sweet it Is
1 1/4 cups of graham cracker crumbs (toss a bunch in the food processor to grind them up, then measure)
1/2 cup and 1 tablespoon of creamy peanut butter
1/2 cup of butter (1 stick)
1 teaspoon vanilla extract
1/4 cup sugar
1/2 teaspoon cinnamon
In a small saucepan, melt the butter. Stir constantly and continue cooking the butter as if foams up and small brown specks begin to appear on the bottom. Remove from heat, then strain the butter to remove the burnt particles. Let cool for 5 to 10 minutes.
Combine all the ingredients in a bowl, stirring together until the dough begins to come together. If it isn’t coming together, add a little more peanut butter. Scoop out small circles of dough onto a baking sheet and flatten them slightly. Refrigerate the cookies for at least 30 minutes before serving. Store any extras in the refrigerator. Enjoy!
