This has been a long week.
Wednesday, Thursday, Friday, and Monday were midterms at my school, and let me tell you, those were some hard tests.
There were 5 – 7 hour cram sessions every afternoon after school, and many nights spent trying not to think about all the things I hadn’t remembered to study.
The tests themselves were two hours long each, two each day. In total, 3 essays were written and at least 400 multiple choice questions were bubbled in on identical, intimidating scantron sheets.
Over the weekend, I suffered from (a self diagnosed ailment,) midterm brain. Everything I read, saw, or heard somebody say could somehow be related back to some random fact on one of my 8 different study guides.
Stress, stress, stress, stress, and more stress.
And, the only thing worse than midterms themselves is the last day of the first semester, where you get back all of your tests and find out just how horrible or wonderful you did. It’s an entire day of panicked hoping that you randomly guessed the right answer and miraculously passed that impossible essay.
Thankfully, I did pretty well on all of my tests (definitely not as bad as expected!), but today was by far the most stressed out day of my high school experience.
Enter Nutella Blondies.
This is a quick recipe you can whip up in no time at all, and the glorious chocolate hazelnut spread melts in deliciously with the unique brown-butter flavor of blondies. Plus, the yummy baking smell is sure to infuse itself into your head, instantly curing you of any midterm brain remnants.
Blondies are the absolute most perfect way to relax yourself after even your very worst days. That, and hot yoga 🙂
Nutella Swirl Brownies
Adapted from Gingerbread Bagels
1 cup of all purpose flour
1/2 teaspoon of baking powder
1/4 teaspoon of kosher salt
1 cup of packed light brown sugar
1/3 cup of unsalted butter, melted and cooled
1 Tablespoon of vanilla extract
3 1/2 Tablespoons Nutella
Preheat the oven to 350 F. Spray an 8 by 8 baking pan with non-stick cooking spray and set aside.
In a bowl, sift together the flour, baking powder and kosher salt; set aside.
In a large bowl, mix together the light brown sugar, melted unsalted butter and vanilla extract. Next, add in the egg and mix to thoroughly combine. Slowly add in the dry ingredients and fold together with a spatula until the ingredients are just combined.
Pour the batter into the baking pan and evenly spread around. Measure out 1/2 tablespoons of the Nutella, dropping each spoonful on top of the blondie batter in three rows. Use a knife to swirl the Nutella up and down, then back and forth.
Bake for 22 minutes. Let cool, then cut into squares and RELAX!
