Peanut Butter and Jelly Muffins

It’s always fun to dress up and be a little more fancy than normal.

I’m going to a family friend’s wedding today, and I’m excited to get all dressed up for their big day. I even got a new dress to wear!

But while it’s fun to dress yourself up every once in a while, it’s also fun to dress up your food up sometimes.

Case en point: these are no ordinary Peanut Butter Muffins.

These rockin’ peanut butter muffins are stuffed with super yummy jam. Raspberry jam, to be specific.

The base muffin is dense and thick with fantastically amazing peanut butter, and I love the bit of tang from the layer of jam.

Please excuse any drool on my keyboard. It’s not my fault these muffins are so incredibly mouthwatering 😉

Peanut Butter and Jelly Muffins

Adapted from The Galley Gourmet

Makes 12 muffins

2 1/4 cups of all-purpose flour

2 teaspoons of baking powder

1/2 teaspoon of kosher salt

2/3 cup of light brown sugar

2/3 cup of peanut butter

6 tablespoons of butter, melted and cooled

2 eggs

1 cup of milk

1 teaspoon of vanilla extract

1/4 cup of raspberry jam (strawberry would be mighty good as well!)

Preheat the oven to 350 F. Line a muffin tray with cupcake liners or spray with nonstick spray.
In a bowl, mix together the flour, baking powder, and salt; set aside.
In a separate bowl, cream together the peanut butter and brown sugar. Add in the butter and eggs, whisking until fully combined. Pour in the milk and vanilla, stirring until the mixture is smooth.
Add the wet ingredients to the dry ingredients slowly, using a spatula to gently fold the batter together. Be sure to get all the dry ingredients incorporated without over mixing.
Use a ice cream scoop to fill each muffin tin up halfway. Add a teaspoon of jam to the top of each muffin. Fill each tin up to the top with another small scoop of batter. This will ensure that your muffins are domed. Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Everyone will be jelly-ous of these!

  1. You looked so beautiful in your new dress, Deanna. Wish I had known to ask you to bring me a peanut butter and jam muffin to sample. But we did all eat amazingly well last night. It was a great wedding and so much fun to be there with you.
