Mango-Avocado-Cucumber Salad

This salad is the epitome of summer. It’s so fresh and bright, you can’t help but think of sunny days and happiness in every bite.

I love this salad. Every time I see it I’m tempted to eat the whole bowl. There’s lots of different textures, from the sweetness of the mango to the creamy avocado to the crunch and the slight bite from the onion.

It’s the perfect snack. It’s the perfect side dish. It’s the perfect everything, as long as you make it!

The best part is that it’s super easy! In less than 20 minutes, you’ll have yourself a huge bowl of refreshing yumminess.

I SUPERDUPEREXTREMELY recommend that you wait until the mango and the avocado are ripe before you make this. The flavors and textures will be much, much better. Nobody likes crunchy avocado.

Mango-Avocado-Cucumber Salad

1 mango, cubed

1 cucumber, cut into quarters

1 avocado, cubed

1/4 cup of chopped cilantro

1 clove of garlic, minced

1/2 of a red onion, chopped

2 tablespoons of lemon juice

2 tablespoons of red wine vinegar

Salt and Pepper

In a bowl, combine the mango, cucumber, garlic, and red onion. Add the lemon juice, cilantro, and red wine vinegar, and continue mixing. Add salt and pepper to taste. Enjoy, and happy summer!
