Do you ever wish you were vacationing on a tropical island, but find yourself stuck on the couch at home?
I think we’ve all been there. No worries though, because I’ve solved that problem with these cookies.
Coconut-White Chocolate Cookies.
Coconut and white chocolate are the perfect tropical combination. They’ll have you looking twice to make sure you haven’t just transported yourself into paradise.
Coconut-White Chocolate Cookies
Adapted from All Recipes
1 1/2 cups of flour
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/2 cup (1 stick) of butter
1/2 cup of packed brown sugar
1/2 cup of white sugar
1/2 teaspoon of vanilla extract
1 1/3 cups of sweetened flaked coconut
1/2 cup of white chocolate chips
Preheat the oven to 350 F. In a bowl, combine flour, baking soda, and salt. Set aside.
In another bowl, cream together the butter and sugars. It should look like smooth, creamy heaven. Add the egg and vanilla extract. Whisk together until smooth. Add the flour mixture, and stir to combine. Gently stir in the coconut and the white chocolate chips. Use a spoon to drop even amounts of dough onto a baking sheet (don’t forget to use anti-stick spray!). Bake for 10-12 minutes, or until beautifully golden brown. Enjoy!
