Ice Cream Heaven

This is my 100% absolute favorite ice cream EVER. It’s cold, creamy, peanut-buttery, and filled with little bursts of chocolate happiness.

Today was miserably hot outside – we’re talking 85+ degrees.  A scoop of this ice cream and you’ll be feeling cool, refreshed, and boasting a very happy tummy.

However, this ice cream isn’t just for hot days. It’s great for cold days, good days, bad days, or any day when you find yourself with a craving for some really good ice cream 🙂

Also, if your house happens to be really hot (like mine), I would make the ice cream in the coldest place in your house. For me, thats the basement, and the only electrical outlet happens to be in my little sewing corner. Sewing machine, meet ice cream maker. Ice cream maker, sewing machine.

Peanut Butter Chocolate Chip Ice Cream

Adapted from Kitchen Chick (this lady is an absolute genious!)

1 cup peanut butter (I like crunchy, but creamy is fine too)

3/4 cup granulated sugar

1 cup of whole milk

1 1/3 cups of half and half – you can use heavy cream if you prefer, but the half and half is much healthier

2 teaspoons of vanilla extract

1/2 cup of chocolate chips

In a bowl, combine peanut butter and sugar until smooth. Add the milk, and stir slowly until the sugar is dissolved and the mixture is smooth. Stir in the half in half (or heavy cream) and vanilla extract until just combined.  Pour the liquid into the ice cream maker, and let it run until the ice cream becomes thick, about 20 minutes. Pour in the chocolate chips and let the ice cream maker run for a few minutes to evenly spread the chips. Use a spatula to pour the ice cream into a container. Once you’re done, feel free too lick any excess ice cream off the spatula. Freeze the ice cream for a few hours (about 2-3) to harden up. Enjoy!

P.S…I recommend eating this ice cream with a matching cookie.

  1. Okay, so this inspired me to try peanut butter chocolate chunk ice cream at Kimball’s on Friday. I’m HOOKED. Never would have thought to, had I not been tempted by your post. Good thing there isn’t one nearby enough to be convenient b/c that could be VERY dangerous.

    • The trick with ordering peanut butter ice cream is to make sure the base is peanut butter, because a lot of the time they add in a swirl instead, which just isn’t the same. Sounds like you found the real thing though!

  2. Yup. It’s definitely a PB base. And I think they also offer one that’s a swirl! That said, it was much better the first time than it was tonight. When I went back. Maybe the magic wore off, but tonight’s batch seemed either a touch too sweet or chocolatey or something. At least the craving has subsided and I don’t need to rush back to clog my arteries. . .
