Mmmm…French Toast. But not just any old ordinary french toast.
Almond French Toast.
I made this recipe for the first time on fathers day this weekend. It was pretty darn delicious.
Almond French Toast is probably the best way to start your day. Its one of those things that makes you smile, even when its WAY too early to possibly be fully awake.
This morning, I found the leftover bread sitting on the counter. It was time for round two.
I used challah for my french toast, but you can use any kind of thick bread lying around. Cut 6 slices and lay them in a glass baking dish.
Crack 2 eggs into a bowl and whisk together. Add 1/2 cup of milk and 1 teaspoon of almond extract. I could seriously spend the whole day just smelling the bottle of almond extract.
Whisk all of the ingredients together, and pour the mixture over the bread in the baking dish.
Cover the dish with aluminum foil and put it in the refrigerator. Let the bread soak for 10 minutes.
After 10 minutes, pull the dish out of the fridge. Heat up a pan on the stove and add a tablespoon of butter. Once the butter has melted, place the bread into the pan. You can probably fit 2-3 slices, depending on the size of your pan.
Let the pieces cook for about 3 minutes or until golden brown. Flip the slices over, and cook the other side until its golden brown.
Once the bread is cooked, remove from the pan and place on a plate. I ate mine with strawberries, confectioners sugar, and orange juice, but you can add whatever toppings you like. Enjoy!

Loaf of challah or other thick bread
1/2 cup milk
1 teaspoon almond extract
1-2 tablespoons of butter
Confectioners’ sugar (for dusting)
Sliced fresh strawberries
Cut 6 slices of the bread and place in a baking dish. Crack 2 eggs into a separate bowl and whisk together. Add 1/2 cup of milk and 1 teaspoon of almond extract. Whisk until combined and pour over the bread. Cover the dish with aluminum foil and refrigerate for 10 minutes. After 10 minutes, remove dish from the refrigerator. Heat up a pan on the stove and add 1 tablespoon of butter. Place 2-3 pieces of bread in the pan and cook for about 3 minutes (or until golden brown). Flip the slices over and continue cooking until both sides are golden brown. Remove from pan and top with strawberries and confectioners sugar. Enjoy!
